This is an updated version of my original tomato burger. I used the batter from my fried artichokes recipe. It gives the tomato a nice crunch. I made a quick spicy sauce with mayo ketchup and some spices and laid it on a homemade burger bun. Recipe at the jump.

Fried Tomato Burger
Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

Ingredients
- 1 medium tomato
- fried artichokes batter recipe
- oil for frying
- Batter
- 1/2 cup of cornmeal
- 1/2 cup of all purpose flour or white spelt
- 1 T. of granulated garlic
- 1 tsp. of granulated onion
- 1 tsp. of salt
- 1 tsp of pepper
- Louisiana hot sauce
- oil for frying
Instructions
- In a 10 inch fry pan heat about a 1/4 inch of oil to medium heat. Cut tomatoes into 2 thick slices. Add tomatoes to batter and cover well. Place coated tomatoes in oil fry until batter is golden brown. Drain tomatoes and place on buns.

- Sauce
- 1/2 cup of vegetarian mayonnaise
- 1/2 cup of vegetarian ketchup
- 2 T. of hot sauce
- salt to taste
- 1/4 tsp. of ancho chili powder
- Combine all ingredients. Spoon over tomatoes and bread.
Notes
* One tomato per person. Vegans eliminate sauce or use vegan mayo
