Ingredients
- 2 large tomatoes
- 1T. of olive oil
- 1/2 tsp.of curry powder
- 1/2 tsp. of garam masala
- 1 tsp. of cilantro paste or 2 T. of fresh
- 1/4 cup of light coconut milk (for a thinner soup add more milk)
- salt and pepper to taste
- Onions
- 1 large onion
- 2T. of olive oil
Instructions
- Heat oil and sauté tomatoes until soft. In another pan heat oil and add onions. Cook until onions are brown. Add tomatoes and remaining ingredients (except for onions and cilantro) to a blender. Blend until smooth.Stir in cilantro and top with onions.
